Week 2 - here I go!!!

OK - I SUCKED last week, but I knew I would!  Family reunion time...and the beer tasted good! 

Week #2 - Here I come.  I have started off the week pretty good.  I'm walking at lunch today :-)  Had a nice big salad for dinner last night, chicken tonight...making better choices!  I gained last week but intend to get that off this week. 

Does anyone have any healthy crockpot recipes???  With having two babies at home, making dinners is a challenge.  My husband and I eat out a TON and we are trying to quit that.  It will not only make us healthier, but save us money, lol!  Even if its not a crockpot recipe, maybe a healthy easy to fix recipe?  Why don't we all share a recipe a week with each other?!?  I know we are all doing different diets, but healthy eating is just that...

  1. I really want to share some recipes too. I don't crock pot often, but I do cook in advance on the weekend and hope to feed the family at least 4 days out of the week from what I cook on the weekend.

    Some go-to's:
    Chicken Parm (or chicken speghetti)
    -Take a bag of boneless skinless chicken breast or strips (buy the frozen bag) Lets say 6 breasts.
    -Empty it in a casserole pan.
    -Add 1 can of tomato sauce, cover and throw it in the oven for 3 hours.
    -An hour before taking it out I uncover it and mix in a cup of Parm cheese.

    If the chicken is still solid, you can put low fat shredded cheese on top for fake Chicken Parm. Or, take it out and shred the chicken (no more cheese) and make it into a sauce for speghetti.

    Noodles, I buy the high fiber white ones now (kids will still eat it). Really don't need a lot, sometimes I'll just eat the chicken by itself, it's filling. OR, put it on top of lettuce for a different take on it!

    Tomato sauce Contadina can
    garlic salt
    1/4 container Kraft Grated Parm Cheese
    Boneless skinless chicken breast (6)
    I say this serves 5 = 449 calories
    If I say this serves 4 = 561 calories
    Or, 1 breast at at time - serves 6 = 374 calories

    Grilled Cheese (this one has gotten me through some rough "I need comfort food" days)
    MyFitnessPal:
    Italiano Bread Schwebels, 2 slices = 320
    Shredded reduced fat cheddar cheese, 1/2 cup (1/4 per sandwich)= 180 calories
    Land O Lakes butter for frying, 1 tablespoon (cut in 4 for each side of each sandwich) = 100 calories
    Total: 600 calories and worth it !

    Meatballs
    MyFitnessPal:
    1/3 container Kraft shredded Parm cheese = 920
    4 slices Italiano bread = 320
    16 oz ground chicken = 693
    16 oz ground beef 96/4 fat = 600

    I say this serves 6 people (4 meatballs) and it is 422 calories per person.

    Add to it mashed potato:
    6 potato (medium) = 660
    2 tablespoons butter = 204
    8 oz almond milk = 80
    Serves 6 = 157 calories

    1. I forgot, the Chick Parm/Speghetti, add water with the sauce because there will be evaporation.

  2. Great recipe Jill! Jenny we do share recipes occasionally as Pop Challenges but we can use this blogspot for anything we want. Everyone, feel free to share good, healthy recipes you find! Recipes are hard for me because my husband doesn't measure anything when he cooks so I have to stand there and guess at the measurements. :)
